At Dixie Blue BarBQue, we use only the finest quality meats, hand-rubbed with our own special blend of spices and slowly pit-smoked for up to 4 hours. Our sauces and side items are made from scratch. We also offer a variety of beer and wine brands to pair with your meal. Dixie Blue BarBQue also offers catering for corporate or personal events as large as 1,000 people.

Over the last 25 years, Pitmaster Kym Spiralke has skillfully mastered the art of creating great BBQ. Hailing from Chicago, IL, Kym’s roots are smoothed in Vienna beef hot dogs and baptized in Italian beef au jus. Kym has owned and operated several restaurants over the years; from namesake Chicago-style hot dog joint Kym’s Beef Express, to the fine dining establishment located in downtown Minneapolis, Staccato’s; Kym has the passion of restaurants in his blood. From the pit, the wood, rub, temperature, prep techniques, and sauce, all these come together to make great BBQ. He is the founder and Pitmaster at Dixie Blue BarBQue, a bustling, family-friendly barbecue restaurant. He lives in Blaine, MN with his lovely wife Janet.
